Folks from all over love my salad dressing recipe, men and women alike! You can use it on salads and also on vegetables, fish, chicken and even steak, to add extra flavor.

You will need a blender or my favorite, a magic bullet to blend all ingredients. Any good quality blender is great but I like to clean up in record speed. The bullet is small and easy to manage. The blending process is crucial to this recipe, because it gives a creamy consistency to the ingredients, namely the olive oil and garlic.

Add all the ingredients below into a blender and commence with olive oil and vinegar. By commencing with these two ingredients you avoid, mustard from sticking to the blender. Blend for about 1 minute and voila, you have a dressing and marinade in one swoop. Store remainder of dressing not used in the fridge, a glass jar is best. You can double the ingredients, if you wish to make more. Add some of your good and happy vibes into the mix, to make sure the energy you add to your food is full of loving vibrations.

To note: Great quality fats are a wonderful metabolic stimulator, not to mention great for your skin. Make sure to select a cold pressed extra virgin olive oil.

Öl 2The oil that comes from the first “pressing” of the olive, is extracted without using heat (a cold press) or chemicals, and has no “off” flavors is awarded “extra virgin” status. The less the olive oil is handled, the closer to its natural state, the better the oil. If the olive oil meets all the criteria, it can be designated as “extra virgin”.

Ingredients:

1 tablespoons Dijon Mustard
1/ 2 cup olive oil
2/4 cup Apple Cider Vinegar
3 garlic cloves
1 generous tablespoon natural Greek yogurt (if dairy free just leave this out)
1 pinch sea salt
1 pinch pepper
1 pinch stevia or 1 teaspoon honey (melt by putting teaspoon into a glass and running hot water or in the microwave for 5 seconds over it then pour into the blender)

The beneficial health effects of olive oil are due to both its high content of monounsaturated fatty acids and its high content of antioxidative substances. Studies have shown that olive oil offers protection against heart disease by controlling LDL (“bad”) cholesterol levels while raising HDL (the “good” cholesterol) levels. No other naturally produced oil has as large an amount of monounsaturated as olive oil -mainly oleic acid.

Olive oil is very well tolerated by the stomach. In fact, olive oil’s protective function has a beneficial effect on ulcers and gastritis. Olive oil activates the secretion of bile and pancreatic hormones much more naturally than prescribed drugs. Consequently, it lowers the incidence of gallstone formation.

On my days off, I love to lounge and when lounging I love to eat healthy snacks. If your looking for great salty snack ideas check out the yummy foods for you to enjoy whilst still living healthy.

• Pickles
• Oysters
• Sardines
• Sweet Potato Chips – check out recipe below!
• Fresh lime and or lemon juice as seasoning or in a beverage
• Salted Edamame ( the green Japanese peas)

Baked Sweet Potato Chips Recipe
I love foods that are good for me including great carbs that don’t send my sugar soaring or send my body into fat storage. That is why I love sweet potato, it is low GI or low sugar and these baked chips rock. This recipe is a great alternative to regular potato chips.
Preparation time: 15 minutes
Cooking time: Approximately 20 minutes on 200 degrees!
Ingredients:
1 sweet potato
3 teaspoons coconut oil
1 pinch sea salt
1 pinch of cayenne pepper
Preparation:
Preheat oven to 200 degrees
Take a large sweet potato, wash and dry off.
Then peel potato length ways to remove skin.
Next, you need to use one of those larger style peelers to cut very fine round slices, so almost like a thin shave.images
Place 2 teaspoons of olive oil into bowl, add a pinch of sea salt and a pinch of cayenne depending on how spicy you like your food!
Then add super thin slices of sweet potato and mix well.
Line baking tray with alfoil and spread another teaspoon of coconut oil on alfoil to avoid sticking.
Evenly place sweet potato on the tray
Bake in oven for 20 minutes, keep an eye on it because you don’t want them to burn! :-) These chips are super fine so you should babysit and check in every 5 minutes the first time
Remove from the oven and set aside for 10 minutes or for as long as you can manage without tasting. Personally, I find it hard to wait too long :-)

I love stevia, because it is natural plant-based sweetener, calorie and carbohydrate free!  Depending on the preparation and concentration Stevia sweetens up to 300 times more than traditional sugar – an ideal way of enjoying sweetness with no worries or added sugar calories.

Here is some background on stevia for your insight into this fabulous product.

The Stevia plant:

Stevia (stevia rebaudiana) is a wild plant that is native to South America. For hundreds of years, Stevia has been known as “honey leaf” to the original inhabitants (of Brazil and Paraguay) and used to sweeten tea and foods. There are indications that Stevia (or Ca-he-he) has been used to sweeten a native beverage called mate since Pre-Columbian times. However, a Natural Scientist names Antonio Bertoni first recorded its usage by native tribes in 1887.

Stevia can be used for cooking and baking. Industrial research in Japan has shown that Stevia and stevioside extracts are extremely resistant to heat and can be used in various ways for cooking and baking in the kitchen or to sweeten beverages.

Q) How has Stevia been used in food applications?

A) First, as a prepackaged replacement for sugar and artificial sweeteners. Second, it has been used in various food products, including the Japanese sugar-free versions of Wrigley’s gums, Beatrice Foods yogurts and even diet Coke. It has also been used in Japanese style pickles, dried seafoods, fish meat products, vegetables and seafoods boiled down with soy sauce, confectioneries and a host of other products. Whether it will reach into food applications such as these in the U.S. market depend largely on the FDA’s regulatory position and health industry efforts to re-classify Stevia as a GRAS (generally recognized as substance.

Q) Is Stevia safe?

A) See chapter 6 for a detailed discussion. In general, Stevia is an all-natural herbal product with centuries of safe usage by native Indians in Paraguay. It has been thoroughly tested in dozens of tests around the world and found to be completely non-toxic. It has also been consumed safely in massive quantities (Thousands of tonnes annually) for the past twenty years. Although one group of studies, perform 1985 through 1987, found one ofthe metabolises of steviosides, called Steviol, to be mutagenic towards a particular strain of Salmonella bacteria, there is serious doubt as to whether this study is applicable to human metabolism of Stevia. In fact, the methodology used to measure the mutagenicity in this test was flawed according to a follow-up piece of research which also seriously questioned the validity of the results. For myself, I intend to use the product with both confidence in nature and respect for the healthy moderation and balance which nature teaches us.

Q) Can Stevia replace sugar in the diet?

A) Yes. Refined sugar is virtually devoid of nutritional benefits and, at best, represents empty calories in the diet. At worst, it has been implicated in numerous degenerative diseases. Stevia is much sweeter than sugar and has none of sugar’s unhealthy drawbacks.

Q) How sweet is Stevia?

A) The crude Stevia leaves and herbal powder (green) are reported to be 10-15 times sweeter than table sugar. The refined extracts of Stevia called steviosides (a white powder, 85-95% Steviosides) claim to be 200-300 times sweeter than table sugar. My experience is that the herbal powder is very sweet while the refined extract is incredibly sweet and needs to be diluted to be properly used.

Q) Can Stevia replace artificial sweeteners in the diet?

A) Yes! I do not believe that humans should consume anything artificial in their diets. Stevia offers a safe, all-natural, alternative to these “toxic time-bombs.” And industrial usage in Japan proves that this substitution is both practical and economical.

Q) How many calories are in Stevia?

A) Virtually none. And the refined Stevia extracts are considered to be non-caloric.

Q) Will Stevia raise my blood sugar levels?

A) Not at all. In fact, according to some research, it may actually lower blood sugar levels. However, this research has yet to be confirmed and contradictory results make any conclusions premature.

Q) Can I use Stevia if I am diabetic?

A) Diabetes is a medical condition which should be monitored and treated by a qualified physician or health care practitioner. However, Stevia can be a part of a healthy diet for anyone with blood sugar problems since it does not raise blood sugar levels. If in doubt, ask your doctor. However, if they do say no, ask them politely for the current research to support their opinion.

Q) Can I combine Stevia with other sweeteners?

A) Most certainly. However, sweeteners in general should be used in moderation in a balanced healthy diet. And refined and artificial sweeteners should be avoided altogether.

Q) Will Stevia harm my teeth?

A) Apparently not. Two tests conducted by Purdue University’s Dental Science Research Group have concluded that Stevioside is both fluo-ride compatible and “significantly” inhibits the development of plaque, thus Stevia may actually help to prevent cavities.

Q) Can Stevia be used in cooking and baking?

A) Absolutely! Industrial research in Japan has shown that Stevia and Stevioside extracts are extremely heat stable in a variety of everyday cooking and baking situations.

Q) Does Stevia contain vitamins and minerals?

A) Raw herbal Stevia contains nearly one hundred identified phytonutrients and volatile oils, including trace amounts of Rutin (from the Callus) and B-Sitosterol (from the leaves). However, in the quantities typically consumed, the nutritive benefits will be negligible. The extracts of Stevia, being more refined, will contain far fewer of these phytonutrients and volatile oils.

Enjoy sweetnes without the calories or chemicals.

I love food so much and one of my greatest achievements is being able to eat what I want, when I want and how much I want, without shame or guilt! The food I adore nourishes my mind, body and spirit.I passionately believe that the right food for our unique bodies is natural medicine that shifts how we feel, look and ultimately live.

Today, I am going to share my breakfast with you. After returning from my morning walk, I was ravenous! I took the time to ask my body, “what do you need to eat today? “.

I started with my usual chocolate coconut and raspberry smoothie but my body wanted more sustenance today. My body said,” This is not enough food Miss Ingrid!  Today you need more fat and protein so move onto something savory.” Within five minutes, I had whipped up a little bit of salmon in my wok (left over from last nights dinner), splashed in a dash of coconut oil, threw in an egg, threw in some sea salt and rosemary and crumbled a slice of goats feta and voila, I had stage two of my breakfast completed.

Make sure to listen to your body. Preparing meals doesn’t have to take a long time. 10 – 15 minutes in the morning is all you need from preparation to devouring your breakfast. If you have to set your alarm a tad earlier then do it. Your body will thank you with increased vitality, a calm attitude and a jiving metabolism. Eat HEALTHY and be MERRY!
raspberry peach smoothieCoconut and Raspberry Smoothie:
10 frozen raspberries
2 – 3 scoops of whey isolate protein powder
1 tablespoon high quality cocoa powder ( from my local health food store)
Sprinkle of stevia to sweeten
1 teaspoon coconut oil
¼ cup coconut milk
¼ cop water
handful of ice

Salmon & Egg Omelette

Cooked in a ¼ a teaspoon of coconut oil

100 grams of diced fresh salmon (You can use smoked salmon or canned. Please see notes below!) Smiling
1 organic egg
Dash of rosemary
Dash of sea salt
1 piece of goats milk feta

Add in coconut oil to wok or fry pan.  Add in salmon and cook for about three minute. Then add the egg, stir ingredients and add in salt and rosemary to taste but make sure not to over do the salt. I love fresh salmon because 1. Fresh is best and 2. There is little to no sodium.

Please note, that you should be able to find low sodium canned salmon and to lower the sodium in smoked products, soak salmon in water overnight. Then drain salmon and pat dry with paper towel.

The body is magnificent and deserves praise rather than abuse. You only have one body so honor it and be grateful for the body you have, regardless of shape or size.

Your body houses your soul, so it’s important to appreciate how powerful your body is and give thanks for all that it does. So you don’t look like a supermodel. Who cares! And if you do care then let that expectation go. The truth is less than 1 % of women look that and in order to obtain the beauty in magazines hours of makeup, hair, lighting and least we not forget, airbrushing has been executed to create this so called “natural beauty”.

So back to gratitude, give thanks for what you do have. It is one of the most powerful and transformational things you can do for yourself. Notice your legs that walk, eyes that see and a powerful mind that creates!

You’re a divine woman as you are now so start with celebrating YOU. If you can give your body some love by having a lovely warm bath, a nourishing meal or chant some loving affirmations full of gratitude, you will start to feel better. Try it you have nothing to lose! Ok, so start by looking into the mirror and say this out loud or silently to yourself,

“ BODY you rock and I love you. Sorry for being such a ball breaker but you are lovely!”

So why is anger harmful to our bodies?

When we are angry with our bodies we are creating an energetic inner battle that depletes our life force. Once we can love ourselves as we are, things gradually start to blossom and flow, both physically and in all other areas of your life. Express gratitude and enter into a new groove. Choose something new about yourself daily to acknowledge and appreciate about yourself. Expand from your physical body and look at your whole body; which includes your relationships, spirituality, career, creativity and passions.

A few more mantra’s to repeat when driving, cooking, before bed or out for a walk:

“ I am divine and sacred just as I am.”
“ I give thanks to my body and I appreciate all that it does for me.”
“ I am lucky to live in this amazing body!”

A great way to fuel your body and to keep your energy balanced through out the day, is to eat 5- 6 small meals or snacks to stay on track. If you want to feel great then snack to stay on track and experience the difference; boost your energy, develop focus and mind power, lift your confidence and improve your health.

1. A STRONG DESIRE TO FEEL FABULOUS.
2. SELF-CARE.
3. PREPARATION.
4. AWARENESS.

Eating a yummy snack every three hours keeps your metabolism burning and your body powering along, avoiding energy slumps and potential binge behavior when your absolutely starving. If you want to have bread, eat sugar free whole grain bread 3 times a week in the morning so you burn it off during the day.

Limit pasta and potato at night and remember the motto is quality not quantity. If you can have grass fed beef once a week, chicken a few times a week and fish a few times a week with ONE glass of wine that would be a great start. Perhaps you can splurge on two glasses on Friday night!! WooHoo.. just remember one glass is good but much more than that is not so great. Each glass has about 4gms of sugar which is pretty low but you would be cutting out quite a bit over say a week and then a month. It all makes a difference and it all adds up!

Here are a few suggestions for you. To save time and to ensure that you are organized, it might be best to prepare some of these snacks at night to take to work. This makes it easy to grab a bite when you feel you need to. Another great idea is to save a portion of your dinner or make an extra meal at night to keep as a snack or meal for the following day. Charcoal or roasted chicken is another option if you hate to cook or don’t have time. Free range or organic are great. They have great chickens (including salt free) at Wholefoods in the States at most Coles and Woolworths in Australia. You can also request them too. For easy eating, cut the chicken into quarters then wrap small portions and take to work or store in your fridge for quick snacks. As soon as your starting to feel hungry take the time to have a 5 minute nosh to eliminate any energy slumps. If we can take sugar breaks then I am sure we can take a nosh break to refuel.  If you get over hungry your blood sugar levels tend to plummet which can make you feel tired, irritable and unfocused. It has also been proven to drop productivity and memory by over 30%. You might want to avoid that from happening!

Make sure to always eat breakfast to jump start your metabolism to supre charge your energy for the entire day.  Not eating breakfast is one of the worst things you can do deplete your energy. While sleeping, you’ve been fasting over night and your body needs food in the morning to operate effectively. So if you have to get up 15 minutes early to make time for breakfast, do it. Your body will thank you.

Binge Busting Snack Ideas:
1. 200 grams Grilled Chicken & 1/4 Avocado
2. Protein Bar / Raw Food Bar (check to see that the sugar content is low and that there is no fake sugars and try to get an organic bar or raw food bar ) I like Horley’s Carb Less Bar and you can get them at health food stores, buy a box and keep at work provided you don’t eat more than one a day.
3. Boiled Egg with a touch of salt
4. Boiled Egg,  200 grams Grilled Chicken & 1/4 Avocado
5. Protein Smoothie (2 scoops protein, 1/2 banana and or berries, water, ice and soy milk – sugar free, delete banana if on low carb diet but having some carbs is good for you as in vegetables, fruit, salad, legumes and some grains)
6. 8 almonds and an apple, or half and apple and one teaspoon of almond butter or peanut butter.
7. Soup – you can buy at most food stores and eat when you feel like it. Go for low sodium options if you can.
8. Buy a whole chicken from Wholefoods / or any store see if they have free range, cut in quarters and keep at work to snack on. Also baking chicken legs takes less than 5 minutes to prepare, see recipe below, point 10.
9. Limit soda or better yet delete it all together, keep a big bottle of water on your desk and aim to drink it all by the end of the day. Also sugar free iced tea can be purchased or easily made with a few herbal tea bags and lots of hot water. I store litres of it in my fridge and my favourite is herbal berry~ I add stevia to sweeten and I am good to go.
10. Chicken legs, l/4 cup of coconut milk, 1 tablespoon of curry powder, one onion chop finely, one capsicum, one zucchini, cut all vegetables finely, dash of sea salt and mix in bowl, then add to baking tray and back on 180 degrees for 30 minutes.  Substitute with other vegetables if you prefer but no potato.
11. Keep frozen berries in freezer have a small bowl for dessert or ¼ of apple sliced finely so you savor it.
12. Iced herbal tea is great. Get a glass jug, boil water and add about 4 tea bags and add water and then chill. If you like some sweetness add stevia.
